I'd advise you not to mess with the  rear wheel bearings. It's a 
rather big job with IRS and an even bigger job  with swing axle, but 
in either case, it's more work than it's worth. Those  bearings seldom
fail, nor do their seals.

And, yes, you really don't  want to get too involved with trying to 
get the tranny with swing axles  out of the car. That's a LOT of work 
that you should leave for a time when  it's really necessary. And it's
likely to never be  necessary.
 
Having done the job on a Swing Axle bug and a Ghia, I can confirm and  
agree with what Jim is saying. If you don't have to get in there, don't. I'd  
change the trans oil, but if your seals aren't leaking, leave sleeping dogs  
alone. In reality, that's reality the only time you need to be in there (if  
they're leaking).
I should mention that IF you decide to go in there anyway, you'll  need to 
make a bearing puller like Muir shows in his "How to keep your  Volkswagen 
alive"book. I say that, as the bearings are a "press fit"on the axle  shafts. 
You'll also have to fabricate an install tool as well (for the  bearings).
