You need the special little pry bar described in the manual.  Also useful for doing Squareback rear hatch springs if your hinges are tweaked and need replacing.  Here's the basic manual info: http://blef.org/vw/t3/fronthoodspring.jpg

I made a crude version of this tool at home by bending a piece of rod and taking an angle grinder to it to make a notch.  Mine looks more like the last picture, and it worked great.  Don't stress out about getting the dimensions perfect, mine is not very picturesque but worked just fine.
