I have done the following on several occasions when night driving was too risky (easier on the interior if stock vinyl):
Cooler with ice water in it and rotate t shirts.  Reached destination hotel and dropped keys, phone and wallet and climbed straight into the shower for a cold water cool down. 
Victoria British used to sell a pressurized mister that sat in your dash to cool off the folks in the front seat.  Can't find mine, but they work very well to about 101F.
